Rajasthani Lasoda Achaar

t begins with fresh lasoda (gunda/clammy berries), a traditional desert fruit known for its unique texture and ability to absorb flavours deeply. Each berry is carefully cleaned and prepared, retaining its natural firmness and subtle earthy taste.

The lasoda is then gently cured, allowing it to soften just enough to develop its characteristic slightly sticky, juicy bite—perfect for holding onto rich, spiced masala.

A bold blend of traditional Rajasthani spices—mustard seeds, fennel, fenugreek, turmeric, and red chilli—is added, creating layers of warmth, aroma, and depth. Each spice is chosen not just for flavour, but for how it complements the unique texture of lasoda.
