Aam Sookha Achaar

It begins with handpicked raw mangoes, chosen for their firm flesh and natural tang—ideal for a pickle that is meant to be bold, textured, and dry.
The mango pieces are carefully cut and sun-dried, allowing excess moisture to evaporate slowly. This traditional process intensifies their tanginess while giving them a dense, chewy bite that defines a true sookha achaar.
Once perfectly dried, the mango is coated with a generous blend of coarsely ground spices—mustard seeds, fenugreek, fennel, turmeric, and red chilli. Unlike oil-heavy pickles, here the spices take centre stage, clinging to each piece and forming a rich, grainy masala that delivers depth in every bite.
A minimal amount of oil is added—just enough to bind the spices and preserve the pickle—ensuring that the final texture remains dry, robust, and intensely flavourful.
Over time, the mango absorbs the spices, developing a deep, tangy warmth balanced with earthy spice notes and a lingering kick.
